Spicy Cranberry Chicken Drummettes

INGREDIENTS

  • 1/2 cup of Ocean Spray® Jellied Cranberry Sauce
  • 2 tablespoons of hot pepper sauce
  • 1 tablespoon of chili sauce
  • 1/2 teaspoon of salt
  • Approximately 2 pounds of chicken drummettes (about 20 pieces)

INSTRUCTIONS

  1. In a large resealable plastic bag, combine all the ingredients except for the drummettes. Mix thoroughly.

  2. Add the chicken drummettes to the bag. Seal it, then turn the bag to ensure the chicken is coated evenly with the marinade. Refrigerate for at least 1 hour, or you can marinate it overnight for even more flavor.

  3. Preheat your oven to 400°F (200°C).

  4. Pour the chicken and the marinade into an ungreased 13 x 9-inch baking dish.

  5. Bake for about 40 minutes or until the chicken is cooked through and no longer pink near the bone. During baking, remember to turn the chicken 2 or 3 times and brush it with the marinade for that extra flavor.

  • Butter: In this recipe, I opt for salted butter, but unsalted butter should suffice. Alternatively, you can lightly spray the chicken with oil rather than coating them in butter.
  • Kosher salt and black pepper: My preference is kosher salt for most of my dishes. If you're using fine salt, consider using a bit less to avoid excessive saltiness.
  • Spices: I like to incorporate garlic powder and paprika. If you prefer, you can use smoked paprika. Additionally, onion powder is an excellent choice, either alongside or in place of garlic powder.

Roast Chicken drummies in the oven

INGREDIENTS:

CHICKEN WING DRUMMETTES:

  • Thawed chicken wing drummettes, 3 lb bag

HONEY / SOY GLAZE:

  • Butter, 6 tablespoons
  • Honey, 1/4 cup
  • Soy sauce, 2 tablespoons

GARNISH:

  • Sesame seeds (to be used as a garnish, do not cook these in the pan)

INSTRUCTIONS

To bake chicken drumettes in the oven, preheat your oven to 425°F. Lightly coat 2 baking pans with oil spray. Arrange the thawed drummettes on the pans, leaving some space around each piece. Bake in the oven for approximately 45 minutes or until they become crispy and thoroughly cooked.

Once done, transfer the hot wings to a sturdy bowl or pan, and generously pour the prepared glaze over the wings. Toss them to ensure an even coating. Arrange them on a serving plate, and then it's time to savor and enjoy!

 

Honey Garlic Chicken Drumettes

Ingredients

For the Chicken:

  • 2 pounds of chicken drumettes (thawed or fresh)
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder
  • ½ teaspoon of black pepper
  • ¼ cup of all-purpose flour
  • 1 tablespoon of baking powder

For the Sauce:

  • ½ cup of honey
  • 4 tablespoons of soy sauce
  • 4 minced garlic cloves
  • 1 tablespoon of finely diced ginger
  • ½ teaspoon of chili flakes
  • â…“ cup of water
  • 1 teaspoon of cornstarch

Garnish:

  • Sesame seeds
  • Thinly sliced green onions

Instructions

  1. Pat the chicken dry using paper towels. Place them on a baking sheet (it's okay if they touch), cover with paper towels, and refrigerate for several hours to allow them to dry out. Ideally, overnight is best. If you're short on time, you can skip this step, but make sure to pat them as dry as possible with paper towels.

  2. Line a large baking sheet with foil and place a baking rack on top. Spray the rack with nonstick cooking spray.Preheat your oven to 450°F.In a large bowl, combine the flour, baking powder, and seasonings. Add the chicken and toss to coat with the flour mixture. Shake off any excess.

  3. Arrange the coated chicken on the rack, ensuring they are close together but not touching.Bake for 30-35 minutes, rotating the baking sheet halfway through. You don't need to flip the chicken. Note that if they don't appear crispy right away, give them a few more minutes; they will become crispier as they cool.

  4. While the chicken is baking, prepare the sauce. In a small saucepan, combine all the sauce ingredients and bring them to a boil. Reduce the heat to low and simmer for 10 minutes, stirring frequently, until the sauce thickens enough to coat the back of a spoon.

  5. Transfer the crispy wings to a large bowl. Pour the sauce over the wings and toss to coat. Then, place the drumettes back on the baking rack and return them to the oven for another 10 minutes.Garnish with sesame seeds and thinly sliced green onions before serving. Enjoy!

GRILLED BBQ CHICKEN DRUMETTES

INGREDIENTS

  • 24 Chicken drumettes
  • 4 tablespoons Spicy Cajun Seasoning
  • 1 cup of your preferred BBQ sauce (I prefer hickory-flavored)

INSTRUCTIONS

  1. Preheat your grill to medium-high heat, approximately reaching 350 degrees Fahrenheit.

  2. Arrange your chicken drumettes on a baking sheet, ensuring they are in a single layer.

  3. Season one side of the drumettes with the Spicy Cajun Seasoning, then flip them over and generously season the other side, ensuring each drumette is well coated.

  4. Transfer the seasoned drumettes to your preheated grill, close the lid, and cook for approximately 12-15 minutes on the first side.

  5. Flip the drumettes over and continue grilling for an additional 10-12 minutes, or until they are nearly cooked through, about 2 minutes away from being completely done. (You want them not quite fully cooked at this stage.)

  6. Starting on one side of the grill, generously brush the drumettes with BBQ sauce, working your way across the grill to ensure they are coated on one side.

  7. On the same side of the grill where you initially started, flip the drumettes over and brush the other side with BBQ sauce.

  8. Once more, starting from the same side of the grill where you began, flip them over one last time.

  9. Gradually remove the drumettes from the grill, starting from the side you've been working on throughout the grilling process, moving across the grill. The additional time they spend on the grill while you're saucing them allows the drumettes to finish cooking to perfection. Enjoy your flavorful drumettes!
